
I know St. Patrick’s Day has already come and gone, but I wanted to share how my St. Patrick’s Day went. I have gone all over Miami on this green beer filled holiday, but I always end up being disappointed. This year I opted to have a chill St. Patty’s Day at home with the fam featuring unlimited food and beer.
Going to pubs and restaurants on this day can be a hassle. Last year I had to come home to eat because the pub that I was at was way too full to even order from. The year before that, the pub that I was at ran out of corned beef.
Next year, I urge you to try having St. Patrick’s Day at home or at a family member or friend’s house (if you haven’t already figured out that this is the way to go). You cannot beat unlimited booze and food! Grocery stores have great deals on Guinness and George Killian’s around this time and Irish food is fairly easy to make (Costco also had a bomb Shepherd’s Pie).
We started off the day with Jameson shots paired with orange juice and bacon. I do not normally do shots, but it was St. Patty’s Day! I also have to practice for when I go to Ireland in the summer….

After the shots, we devoured the lovely Irish breakfast my Mom cooked up (bangers, eggs, and potatoes). We bought the bangers at Aldi (they always have festive food for St. Patty’s Day) and just cooked them on a pan.

After breakfast we were all pretty full. It took all my strength not to take a nap! For appetizer, we got these Irish cheeses at Aldi.

For dinner we prepared a feast for our guests: corned beef, coleslaw, roasted mini potatoes, and boiled cabbage, potatoes & carrots. I will say, the meal paired perfectly with a Guinness(;
I love Reuben Sandwiches, so I made my very own (corned beef, coleslaw, rye bread, and Russian dressing). Since my blog is all about honesty, I will admit I also made myself one the next day for lunch.

For dessert I made Guinness Chocolate Cake and it was awesome! There was not any dairy in it, so I was really happy about that. Here is the recipe I used: http://wallflowerkitchen.com/vegan-guinness-chocolate-cake/.
