Healthy & Easy Pumpkin Bread

 

I woke up craving pumpkin bread, so I made it! It was challenging for me to find the perfect recipe, but I eventually found one I could work with. Baking is a science and an art, therefor I am cautious when experimenting. This is the recipe I used to get me started: https://cookieandkate.com/2016/healthy-pumpkin-bread-recipe/. I wanted to make a healthy loaf, due to halloween being around the corner.

 

Ingredients:

 

  • 1/3 cup olive oil
  • 1/2 cup honey
  • 2 eggs
  • 1 pumpkin pie purée
  • 1/4 cup almond milk. 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon allspice
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 3/4 cups whole wheat flour
  • 1/2 cup of oats

 

Instructions:

 

I, for the most part, followed the instructions in the recipe above. I strayed when I added oats and when I chose not to add cinnamon on top of the batter (mainly because I ran out of cinnamon).

 

Results:

 

It came out amazing! I love how it was not that sweet. I devoured it without putting anything additional on it. My Mom opted to spread butter on it for a special touch of saltiness
